Diving mask, snorkel and flippers
2 lobsters from San Blas Islands
2 onions, 2 tomatoes, 3 cloves of garlic, 1 red pepper
2 cups of rice, olive oil, salt, black pepper, paprika, parsley and water
Directions
Jump into the water with your diving mask, snorkel and flippers, eager to fish lobsters. If you are not lucky, the Kuna fishermen in the San Blas Islands will get you some, they never fail!
Cut the lobsters’ tail from the head, and boil the cut-in-half heads in a pot for aprox. 8 min. Fry lightly the onions, red pepper, grated tomatoes, garlic and parsley in olive oil. Add the rice and the hot strainned stock (double water per measure of rice) and spice it with paprika, salt and black pepper. Bring it to boil and cook it in medium heat. Add the lobster’ tail in pieces in the last 10 minutes of cooking. Let it stand for 5 minutes, while having a refreshing dip before sitting in the shade of your cockpit to enjoy your meal, the sight of the San Blas Islands around you and the feeling of being the most fortunate guy on planet!
